Pumpkin Oatmeal Cookies...




This cookie is delicious! I found it on Facebook and just had to try it. It turns out to be a keeper. Everyone that has eaten one has said they thought they were nummy! They are moist and chewy, not too much pumpkin flavor and the cinnamon sugar on top just adds the right touch. Enjoy! 2 C. flour
2 1/3 C. old fashioned oats
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1 C. ( 2 sticks unsalted butter) softened
3/4 C. dark brown sugar
3/4 C. granulated sugar
2 Tbsp. honey
1 C. pumpkin puree
1 large egg
1 1/2 tsp. vanilla extract

Preheat oven to 350 degrees. Line baking sheets with parchment paper.

Combine flour , oats, baking soda, baking powder, cinnamon, pumpkin pie spice and salt in a bowl.
cream butter, honey, and sugars in a large mixing bowl until light and fluffy. about 3 minutes. Add pumpkin, egg and vanilla- mix well.

Add dry ingredients and mix until just combined. do not over mix. Chill dough for 30 minutes.

With a small scoop drop cookie dough onto baking sheets. they should be a rounded tablespoon. Sprinkle tops with cinnamon and sugar.

Bake 14 minutes. cool on baking sheet for several minutes and then transfer to a wire rack to cool.
